Are you still searching for an easy vegan mac and cheese recipe that does not include soaking cashews overnight or blending potatoes + carrots together for a creamy sauce? and THEN pretending it tastes identical to the real stuff? You are not alone my friend. This is a simple and easy recipe using minimal ingredients. If you are already vegan then you likely have all these ingredients on hand. If you are not vegan, the ingredients needed are easy to find and worth the purchase cause you will use them on the daily.

Ingredients (serves 2):

  • 1 cup of elbow pasta

  • 1 cup of unsweetened plain oat milk

    • Note: do not use soy milk as it is naturally really sweet even with no sweetener and almond milk tends to have a strong flavor that over powers this dish.

  • 1 tbs vegan butter (I use earth balance)

  • 1/3 cup of nutritional yeast (preferably Trader Joe’s brand)

  • 1/3 cup of vegan cheese shreds (any brand)

  • 1 tsp onion powder

Other optional ingredients:

  • 1 teaspoon olive oil and salt

    (for boiling pasta)

  • pepper to taste

    (to top the final dish)

 

Step 1: Pour water into a pot and keep it on high heat. As soon as the water begins to boil add the olive oil, salt (optional) and pasta. Usually the back of the pasta box will tell you the cook time but I personally keep it boiling for roughly 10 minutes and then i take a bite to determine if it is cooked. While this is cooking proceed with the next steps.

Step 2: On medium heat add butter to a pan. As soon as the butter melts add the oat milk, vegan cheese of choice, onion powder and nutritional yeast. Like so….

Step 3: Do not leave this alone to cook. Continue to stir all the ingredients together on medium heat until the cheese shreds have melted. If there are tiny little bits that wont melt, do not worry.

Step 4: Drop the heat down to low until the pasta is fully cooked and ready to be combined.

Step 5: Once the pasta is complete (taste it to ensure its fully cooked); drain it and pour the pasta into the cheese mix.

Step 6: Turn the stove up medium high heat and use a spatula to stir the cheese and pasta together. The medium high heat will start creating bubbles and the sauce will begin to thicken a bit more. Do this for one minute.

Step 7: Add pepper to taste across the mac and cheese.

(feel free to add any additional toppings like bread crumbs, paprika, salt, etc)


Viola! We are finished. This is such an easy recipe that can be made with on hand pantry staples.
